芽菜紫菜卷及沙拉

发芽好的豆芽可以和其他食材凉拌为沙拉,或是用紫菜片卷成春卷。除了大豆芽(黄豆及黑豆)之外,豆芽大都可以生吃,如果觉得味道苦涩(如红豆),可以用热水稍微滚烫后再使用。当然也可以炒豆芽,不过大火会破坏营养,所以建议先烫后炒。
